冷鲜猪后腿肉丝中热杀索丝菌生长预测模型的初步研究

         

摘要

SAS software was used to fit growth predictive model of Brochothrix thermosphacta in chilled pork hind leg muscle under 0 - 20℃. The results showed that Gompertz equation can well describe the growth of Broehothrix thermosphacta under different temperature, and R2 of this model was above 0. 99. Square root model was used to describe the relations between temperature and maximum specific growth rate and delay period, and R2 was 0. 9769 and 0. 9153, respectively. The preliminary research showed that growth predictive model can predict the growth of Broehothrix thermosphacta under 0 - 20℃ ef- fectively.%以冷鲜后腿肉丝为研究对象,应用SAS软件拟合0~20℃条件下热杀索丝菌的生长预测模型。结果表明:Gompertz方程能很好地描述不同温度下热杀索丝菌的生长,得到的热杀索丝菌一级生长预测模型R2值均在0.99以上;利用平方根模型描述温度与最大比生长速率和延滞期的关系,得到热杀索丝菌二级生长预测模型R2分别为0.9769和0.9153,具有良好的线性关系,初步说明模型能有效地预测0—20℃冷鲜后腿肉丝中热杀索丝菌的生长。
