新型无损检测技术在肉品品质检测中的应用

         

摘要

Non -destructive testing technology characteristics of nondestructive, quick and accurate was applied widely in meat science research for its detection. In this paper, the principle of electronic nose, electronic tongue, near - infrared spectroscopy, Raman spectroscopy and low - field nuclear nagnetic nesonance (low- field NMR) were introduced briefly and their applications in meat science were also discussed. Moreover, the application trend was predicted.%无损检测技术因具有非破坏性,快速,精准的特点在肉类研究中得到了广泛应用。本文简要介绍了电子舌和电子鼻、近红外光谱、拉曼光谱、低场核磁共振等新型无损检测技术的原理,详细论述了其在肉制品品质检测中的应用情况,并对其应用前景进行了展望。
