潍坊地区市销白条鸡肉中菌落总数的测定

         

摘要

食品中菌落总数反应食品被细菌污染的程度,是判定食品卫生质量的重要指标之一。2014年9~12月份笔者采集到的潍坊地区6处超市和集贸市场销售的白条鸡肉30份,分4批次对鲜白条鸡肉样本中菌落总数进行检测,结果表明:市销鲜白条鸡肉都存在不同程度的污染现象,农村大集销售的鲜白条鸡肉细菌污染尤为严重。此现象应引起监管部门高度重视。%The total colony count in food reflects the degree of bacterial contamination of food and it is one of the important indicators of food hygiene quality. From September to December in 2014, thirty sets of white bar chicken samples were collected from six supermarkets and fair trade market in Weifang area. Fresh white bar chicken samples were divided into four batches to detect the total colony count. The result showed that the price -to -sales fresh white bar chicken had different degrees of pollution phenomenon. The fresh white bar chicken sold in large rural market was seriously polluted. The supervi⁃sion department should attach great importance to this phenomenon.
