基于lSM技术的白酒供应链质量安全风险分析

摘要

白酒质量安全关系国计民生,保障白酒的质量安全是政府及酒业工作者的责任和艰巨任务.从白酒供应链梳理的粮谷原料供应风险、酿造加工风险、物流储运风险、销售消费风险以及政府监管风险等五方面风险出发,利用解释结构模型(ISM)对彼此间关系及相互影响进行研究,指出政府监管风险是白酒风险的基础,粮谷原料供应风险是白酒风险的源头,酿造加工风险是白酒风险的核心,物流储运风险是白酒风险的关键点,销售消费风险是白酒风险的爆发点.%The quality and safety of Chinese baijiu is related to the national economy and the people's livelihood, and the guarantee of the quality and safety for Chinese baijiu is the responsibility and arduous task of the government and practitioners.The risk from the perspective of the Chinese baijiu supply chain include grain supply risk,brewing risk,storage and transportation risk,sales and consumption risk,and government supervision risk.Interpretative structural model (ISM)is used to study the relationship and mutual influence for five aspects of the risk,pointing out that government regulation is the basis of risk,grain supply risk is the source of risk,brewing risk is the core of risk, storage and transportation risk is the key point of risk, consumption risk is the outbreak of risk.
