Wine aging in oak barrels is an important procedure in the production of quality grape wine. Oak barrel, as a kind of limited natural resources, is expensive and its service life is normally 5~6 years. In this paper, based on the practical use of oak barrel in wineries, the renova-tion and daily cleaning&maintenance of oak barrel were discussed to prolong its service life, to make full use of its beneficial substances, and to achieve the purpose of quality&efficiency-improvement.%橡木桶陈酿是生产优质葡萄酒过程中不可或缺的一个重要环节.然而橡木桶作为一种有限的自然资源,价格昂贵,其使用寿命通常仅为5~6年.结合生产实际,重点从橡木桶的翻新及日常清洗维护等方面进行综述,以期延长橡木桶的使用寿命,最大化地汲取橡木桶中的有益物质,达到提质增效的目的.
