The technologies of ultrasonic extraction and microencapsulation of red pigment ( RP) from Myrica rubra pomace were studied. The optimized ultrasonic extraction conditions of RP were obtained by an orthogonal design; material/liquid ratio, pH, time and ultrasonic power as 1 : 12 g · mL-1, 1, 40 min and 400 W, respectively. By the single factor experiments, the technological conditions of microencapsulation of RP from M. rubra pomace were as follows; the ratios of Arabic gum to maltodextrin (wall materal) and the core substance to wall material was 1 : 3 and 1 : 14, respectively; the contents of sucrose fatty acid ester ( emulsion) and pururan (viscous agent) were 0. 6% and 0.5%, respectively. Stablility experiment of microencapsulation RP indicated its resistibilities to acid, heat and light were significantly increased.%研究了杨梅渣红色素的超声提取和微胶囊化工艺.通过正交实验确定了杨梅渣红色素超声提取的最佳工艺条件:料液比为1∶12 g· mL-1,pH =1,提取时间为40 min,超声波功率为400W.通过单因素实验确定了杨梅渣红色素微胶囊化的工艺条件:壁材阿拉伯胶与麦芽糊精的比例为1∶3,芯壁比为1∶14,乳化剂蔗糖脂肪酸酯的含量为0.6%,黏稠剂普鲁兰多糖的含量为0.5%.稳定性实验表明杨梅渣红色素经微胶囊化后耐热、耐酸、耐光性显著提高.
