[目的]试验测定四川泸州黄羽山地乌骨鸡群体的屠宰性能及肌肉品质,为其保种和选育提供基础信息.[方法]黄羽山地乌骨鸡及青脚麻鸡1日龄雏鸡各300只,分别饲养至150日龄和75日龄.随机选择150日龄黄羽山地乌骨鸡,75日龄青脚麻鸡,公、母鸡各15只进行屠宰性能测定(两群体均处于正常的上市日龄);采用水解法测定胸肌内氨基酸,索氏抽提法测定胸肌肌内脂肪含量.[结果]黄羽山地乌骨鸡公、母鸡150日龄体重分别为2.32 kg和1.74 kg,青脚麻公、母鸡75日龄体重分别为2.59 kg和2.11 kg.黄羽山地乌骨鸡公、母鸡的屠宰率显著高于青脚麻公鸡(P0.05).肌肉品质测定结果表明:黄羽山地乌骨鸡公鸡胸肌的红度值a显著高于青脚麻公鸡(P0.05);The redness values of male YFM chickens was significantly higher than that of DFG chickens(P<0.05),and the content of intramuscular fat,the essential amino acids(Thr,Met,Ile, Leu and Phe),and the delicious amino acids(Glu,Asp,Arg and Gly)in breast muscle of YFM chickens were significantly higher than those in DFG chickens(P<0.05).[Conclusion]Generally,the carcass per-formance and meat quality of Yellow-feather mountainous chickens were better than those of Dotted-feather and green shank chickens.
