利用硬脂酸乙酯制备类可可脂工艺研究

     

摘要

The main factors influencing the synthesis of cocoa butter which is rich in l,3-dipalmitic acid-2-oleic acid glyceride (POP),1-palm acid-2-oleic acid-3-stearic acid glyceride (POSt) and 1,3-stearic acid-2-oleic acid glyceride (StOSt) were investigated in solvent free system.Ethyl stearate (ESt) and palm oil midfraction (POMF) were used as raw material and 1,3-specific immobilized lipase as catalyst.The effects of the variety of enzymes,the substrate ratio,enzyme dosage,reaction temperature,reaction time on the quality of cocoa butter equivalent were studied,respectively.To get the high quality of cocoa butter equivalent which is the most close to natural cocoa butter in triacylglycerol composition and physical properties,the ideal process conditions were determined as follows:12 % dosage of immobilized enzyme,substrate rate is 6 ∶ 1,the reaction time is for 110 min,the reaction temperature is at 60℃C.The reaction products were purified by reduced pressure distillation and dry fractionation under this condition,the content of the POP,POSt,StOSt were 32.01%,34.79% and 32.01% respectively.The total content of all the glyceride is 74.95 %.The high quality cocoa butter equivalent was prepared.%研究了在无溶剂体系中,以硬脂酸乙酯(ESt)和棕榈油中间分提物为原料,以固定化1,3-位特异性脂肪酶为催化剂,合成类可可脂的主要影响因素,包括酶的种类、底物摩尔比、酶的用量、反应温度和反应时间.所得类可可脂与天然可可脂的甘三酯组成极为相似,富含l,3-二棕榈酸-2-油酸甘油酯(POP),1-棕榈酸-2-油酸-3-硬脂酸甘油酯(POSt)和1,3-二硬脂酸-2-油酸甘油酯(StOSt).得出理想工艺条件为:酶用量12%,底物质量比6:1,反应时间110min,反应温度60℃.在该条件下反应产物经减压蒸馏和干法分提提纯后,其POP、POSt、StOSt的含量分别为32.01%、34.79%、8.15%,三者总含量达到74.95%,是一种较高品质的类可可脂.
