Mn2+对肠膜状明串珠菌产右旋糖酐的影响

     

摘要

Affected by dextransucrase produced by Leuconstoc mesenteriodes inverted sucrose as raw material into dextran and produced fructose.This research focuses on the effect of Mn2+on L.mesenteriodes and initial probe the effects on the fermentation and the production of dextran.And carry out the study on the effect of Mn2+on L.mesenteriodes Lm-1226 growth, fructose, and dextran production, as well as the effect on dextransucrase reaction.A certain concentration of Mn2+could enhance the growth of L.mesenteriodes Lm-1226:Mn2+inhibited L.mesenteriodes Lm-1226 fermentation to produce fructose and dextran, and this inhibitory effect was stronger as Mn2+concentration higher.Mn2+inhibited L.mesenteriodes Lm-1226 to produce dextransucrase.However, Mn2+possessed fairly strong dextransucrase activation, and this activation effect could reach up to 158%.The optimal concentration of Mn2+was at 5.0 mmol/L.%肠膜状明串珠菌在其产生的右旋糖酐蔗糖酶的作用下, 以蔗糖为原料转化合成右旋糖酐和产生果糖.着重进行了Mn2+对肠膜状明串珠菌Lm-1226发酵产右旋糖酐影响的初步探索.对Mn2+对肠膜状明串珠菌Lm-1226的生长, 产果糖、右旋糖酐和右旋糖酐蔗糖酶, 右旋糖酐蔗糖酶作用影响进行了研究.一定浓度的Mn2+对肠膜状明串珠菌Lm-1226的生长具有促进作用;Mn2+抑制肠膜状明串珠菌Lm-1226发酵产果糖和右旋糖酐, 且Mn2+浓度越高, 抑制性越强;Mn2+对肠膜状明串珠菌Lm-1226发酵产右旋糖酐蔗糖酶有抑制作用;Mn2+对右旋糖酐蔗糖酶具有较强的激活作用, 激活作用可达158%, 最适Mn2+浓度为5.0 mmol/L.
