以肉桂醛为研究对象,探讨了肉桂醛对4种常见细菌的体外抑菌效果。结果表明:肉桂醛对大肠杆菌、枯草芽孢杆菌、金黄色葡萄球菌、沙门氏菌的生长均有较强的抑制能力,其抑菌能力随着浓度的增大而增强;肉桂醛对大肠杆菌和金黄色葡萄球菌的最低抑制浓度(MIC)为0.4μg/mL,对枯草芽孢杆菌的MIC为0.3μg/mL,对沙门氏菌的MIC为0.2μg/mL;肉桂醛在121℃、60min处理时间内抑菌效果不受影响,稳定性较好。%Choose cinnamaldehyde for a research object, discuss the bacteriostasis test of several common bacteria on cinnamaldehyde in Vitro. The results showed cinnamaldehyde have an stronger bacteriostasis ability on Escherichia coli, Bacillus subtilis, Staphylococcus aureus and Salmonella grow, and the bacteriostatic ability increased with the increase of cinnamaldehyde concentration;The minimal inhibitory concentration(MIC) for Escherichia coli and Staphylococcus aureus is 0.4μg/mL, while the MIC for Bacillus subtilis is 0.3μg/mL and for Salmonella is 0.2μg/mL;The bacteriostatic effects make no difference when cinnamaldehyde was heated under 121℃, 60min which indicated that cinnamaldehyde has high heat stability.
