刃天青还原法快速检测鲜牛奶中总菌数的研究

         

摘要

鲜牛奶中细菌活动繁殖后的产物——还原酶可使刃天青等还原型染料褪色,试验结果表明:刃天青褪色时间(t)与牛奶中总菌数(N)存在一定的关系,通过生物学统计方法建立数学回归模型:N=A1ekt+y0即N=5 969.906 94e-0.888 636t+36.544 59.刃天青还原法检测牛奶总菌数方便快速,比传统的菌落计数法快40 h左右.%Reductase, the product reproduced by bacteria in fresh milk, can make reductive dyes, such as resazurin, fade. The experiment results showed that the fading time (t) of resazurin had a certain relationship with the total bacteria count (N) in milk, and a mathematic regression model was established by biological statistics, N= A1ekt+γ0, N= 5 969.906 94-0.888636t+36.544 59. The resazurin reduction method was rapid in detecting the total bacteria count in milk, and the detection time was reduced by about 40 hours in comparison with the conventional colony counting method.
