Through the expounding by-products processing of coarse cereals in our country and its functional component,such as dietary fiber,bioactive peptide,functional oil,functional protein,contents of flavonoids,polysaccharose substance and principal pigments,the extraction method,biological activity,physiological function and its application were analyzed and summarized to clarify the advanced utilization and developed direction for by-products processing of coarse cereals.%通过对我国杂粮加工副产物中功能成分如膳食纤维、生物活性肽、功能性油脂、功能蛋白、黄酮类物质、多糖类物质、色素类物质等提取方法、生物学活性、生理功能及其应用进行分析综述,从而阐明我国主要杂粮作物副产品深度利用前景和发展方向。
