以尼西鸡、武定鸡的腿肌为研究对象,采用索氏抽提法和气相色谱法检测其脂肪和脂肪酸含量,对两种鸡种的脂肪和脂肪酸含量进行差异分析.结果表明:(1)武定鸡和尼西鸡以油酸、棕榈酸、亚油酸、硬脂酸、花生四烯酸为主;(2)同一种地方鸡腿肌的脂肪和脂肪酸含量母鸡显著高于公鸡(P＜0.05);多不饱和脂肪酸和必需脂肪酸含量性别之间差异不显著(P＞0.05);(3)不同地方鸡单不饱和脂肪酸含量差异不显著(P＞0.05),武定鸡腿肌脂肪和18种脂肪酸含量总和高于尼西鸡,尼西鸡的多不饱和脂肪酸和必需脂肪酸含量高于武定鸡.武定鸡母鸡腿肌的脂肪和脂肪酸含量极显著高于尼西鸡的母鸡的含量(P＞0.01),两种地方鸡公鸡腿肌的脂肪和脂肪酸含量差异不显著(P＜0.05).%This experiment was conducted to compare the fat and fatty acid in Wuding chicken and Nixi chicken,and to provide a research basis for the development and utilization of Yunnan local chicken.The leg muscles of Nixi chicken and Wuding chicken were taken as the research object.Use the soxhlet extraction and gas phase chromatography to detect the contents of fat and fatty acids for nutrient composition in same varieties of different sex and different varieties of local chicken of same sex.The results showed that (1) the fatty acids in the chicken muscles were mainly consisted of oleic acid,palmitic acid,linoleic acid,stearic acid,and arachidonic acid.(2) In same varieties of different local chicken leg muscles,fat and fatty acid contents in hen's leg muscles was significantly higher than the cock in the same species (P＜0.01),the contents of polyunsaturated fatty and essential fatty acid were not significantly different (P＞0.05).(3)For different varieties of local chicken,the contents of monounsaturated fatty acid were significantly different (P＜0.05);Fat and 18 fatty acid contents in leg muscles of Wuding chicken were higher than Nixi chicken,polyunsaturated fatty acid and essential fatty acid contents in Nixi chicken were higher than Wuding chicken.There was significant difference between fat and fatty acid content of the Wuding chicken and Nixi chicken hen's leg muscle (P＜0.05),no significant difference in the cock's leg muscle (P＞0.05).
