微细化马铃薯淀粉疏水亲脂化改性研究

         

摘要

In order to study the impact of miniaturization on potato starch (MPST)'s hydrophobic lipophilic characteristics,the miniaturization MPST has been taken as raw materials to be modified by the aluminic acid ester coupling agent (DL)to research the moisture and oil absorption.The results showed that the dispersion rates of all kinds of modified starch were improved after lipophilic modification by aluminic acid ester coupling agent.The dis-persion rate in MPST/liquid paraffin was reduced by 16.6% on the condition of granularity of 11.919 μm and stand-ing modification of 12 h.For the declination of the particle size of MPST,the stability of the dispersed system was significantly increased.Meanwhile,the hygroscopicity and oil absorption of MPST were improved obviously.For the decreasing of the MPST size,the oil absorption rate gradually increased from 32.9% of potato starch to MPST (d50 =11.919 μm)77.2%,and the potato starch and various MPST hydrophobic lipophilic modification (by the order big to small)oil absorption rate decreased by 6.6%,16.1%,32.2%,44.7% and 59.4%.%为了研究细微化对马铃薯淀粉(MPST)疏水亲脂化特性的影响,本试验以微细化 MPST 为原料,利用铝酸酯偶联剂(DL)对其进行改性,考察改性后 MPST 的吸湿性和吸油性。试验结果表明:经 DL 疏水亲脂化改性之后,MPST 分散率明显提高,当 MPST 的粒度为11.919μm 时,改性后静置12 h,在 MPST/液体石蜡的分散率仅降低16.6%;随着 MPST 颗粒粒度的减小,疏水亲脂化 MPST/液体石蜡分散体系的稳定性明显提高;疏水亲脂化改性可有效改善 MPST 的吸湿性,减少 MPST 的吸油性,随着 MPST 颗粒粒度的减小,其吸油率逐渐上升,从马铃薯原淀粉的32.9%上升到 MPST(d50=11.919μm)77.2%,经疏水亲脂化改性后的马铃薯原淀粉和各 MPST(从颗粒粒度由大到小排列)吸油率分别下降了6.6%、16.1%、32.2%、44.7%和59.4%。
