毛竹退笋的营养分析及不同时期营养成分的变化规律

     

摘要

Phyllostachys heterocycla cv. pubescens (Moso) is one of main bamboo species.Moso bamboo shoots are used as one kind of main forestry vegetables in South China. The degraded shoots restricted the production of bamboo forests to some extent. Only parts of them are used to process dried bamboo shoots, while large amounts of them were discarded or decayed. Our analysis showed that the total sugar and reducing sugar of the degraded shoots were lower than that of their normal siblings. The rude protein of the degraded shoots was 6. 03% ~ 6.97%, higher than that of the normal ones. The total amount of amino acids,especially Asp,Ser and Tyr, was evidently higher than that of the normal ones. The degraded shoots were rich in elements such as Ca, Mg, Fe and Zn. Therefore, the degraded shoots had a high nutritional value and might be processed into the bamboo shoot foods.%毛竹是我国的主要竹种之一,毛竹笋是南方地区主要的林源蔬菜,然而毛竹退笋是影响竹林可持续经营的重要因素.仅有部分退笋用来加工笋干,大量的退笋没有得到利用.试验利用食品营养成分的分析方法,对毛竹退笋的营养成分进行了测定,以期开拓退笋的利用.结果是,毛竹退笋的总糖及还原糖含量低于健壮笋;退笋的蛋白含量为6.03%~6.97%,高于健壮笋;退笋的氨基酸总量明显高于健壮笋,尤其是Asp、Ser、Tyr3种氨基酸;退笋中草酸明显积累;退笋富含钙、镁、铁、锌等微量元素.结论是:毛竹退笋有很高的营养价值,也可加工成竹笋食品.
