为了解不同饲养方式下宗地花猪的肌肉营养成分,选取宗地花猪双月仔猪30头,随机分为放养组和舍饲组,每组15头,饲养至9月龄,每组分别随机抽样3头进行屠宰,测定肌肉营养成分并进行营养评价。结果表明:两种饲养方式下宗地花猪肌肉的主要营养成分差异不明显,氨基酸丰富且含量高,放养组、舍饲组的氨基酸总量分别为(67.09±1.40)g/100g 和(67.61±1.54)g/100g,必需氨基酸/总氨基酸分别为41.85%和42.06%,必需氨基酸/非必需氨基酸分别为71.97%和72.60%,均超过 FAO/WHO 的理想蛋白质模式标准,均属于优质蛋白质食物,舍饲组宗地花猪的营养价值略优于放养组。%In order to understand the muscle nutrient composition of Zongdihua pig with different feeding methods,2-month age of Zongdihua piglet were randomly divided into 2 groups as free-range group and indoor feeding group,3-head of each group were slaughtered to measure nutrient composition and nutrient evaluation.The results showed that there was no significant difference on muscle nutrient composition.There were rich amino acids,and their content were higher,total amino acid content of free-range and indoor feeding were 67.09±1.40 g/100 and 67.61±1.54 g/100g,the essential amino acid and total amino acid were 41.85% and 42.06%,the essential amino acid and nonessential amino acid were 71.97% and 72.60%,respectively,all of them were above the standard of ideal protein profiles of FAO/WHO,and all of their meat belonged to high quality protein food.Among them,the nutritional value of indoor feeding group was slightly better than free-range group.
