PROBLEM TO BE SOLVED: To provide a quality evaluation method for buckwheat that can appropriately perform quality evaluation for buckwheat, utilizing excitation fluorescence.SOLUTION: The present inventor has performed experiment and the like for correlation between quality evaluation and fluorescence amount for unpolished buckwheat by a milling company and the like, and as an index which can evaluates unpolished buckwheat, has found that it is possible to use fluorescence amount of a wavelength range of 500-640nm, for example, in a case of violet laser excitation fluorescence, and has confirmed that it is possible to appropriately perform quality evaluation of the unpolished buckwheat similarly as the evaluation in a market place using the index. A quality evaluation method for buckwheat according to the present invention measures the fluorescence amount of a fluorescent component of a predetermined wavelength range region from violet laser excitation fluorescence of the unpolished buckwheat based on such findings, and evaluates quality of the unpolished buckwheat by comparing this with a pre-obtained reference value.SELECTED DRAWING: Figure 4
