为提高鳕鱼皮的附加值,采用正交试验法探讨鳕鱼皮胶原蛋白肽与硫酸铜螯合反应条件,制备鳕鱼皮胶原蛋白肽铜。结果表明:制备鳕鱼皮胶原蛋白肽螯合铜的最佳条件是胶原蛋白肽与硫酸铜的质量比为3.5∶1,pH 7.0,反应温度50℃,反应时间40 min,该条件下铜离子的螯合率为34.35%。%The preparation conditions of copper chelate from collagen peptide of cod skin were optimized by the orthogonal design to improve addition value of cod skin.The copper chelation rate from collagen peptide of cod skin under the optimum preparation conditions of 3.5:1 of collagen peptide/copper sulfate ratio,pH 7.0,50℃ and for 40 min can reach 34.35%.
