This paper makes use of the texture analyzer,and then researches the destructive and the apparent contact elastic modu-lus of soybean on six different moisture content(9.69%、11.09%、12.53%、14.41%、15.68%、17.26%)and two compressive direc-tion(the long axis and the medial axis).The results showed that,with the increase of moisture content of soybean,the maximum de-structive compression of the medial axis (Y axis),and the long axis (X axis) decreases,and the apparent elastic modulus decreases.%利用质构仪测定了不同含水率(9.69%、11.09%、12.53%、14.41%、15.68%、17.26%)的早熟一号大豆在不同压缩方向(长轴和中轴)下的破坏力及表观接触弹性模量。实验表明,随着含水率增加,早熟一号大豆籽粒在中轴(Y 轴)、长轴(X轴)压缩方向的破坏力减小,表观接触弹性模量减小。
