介绍了葡萄酒中白藜芦醇含量的影响因素,如葡萄酒种类、葡萄品种和产地、浸渍工艺、过滤方法和贮藏条件,并就葡萄酒中白藜芦醇的五种检测方法等方面的研究现状和进展情况进行了综述。%The main factors which influenced resveratrol content in wine such as wine type , grape variety and producing region, maceration process, clarification method, storage condition were introduced. Meanwhile, five detection method of resveratrol content in wine were also reviewed.
