产肠球菌素乳酸菌发酵条件优化及其性质研究

         

摘要

以自主分离的一株屎肠球菌BC-3为研究对象,对其代谢产生细菌素的发酵条件进行优化,得到最佳发酵条件为:发酵时间20 h、pH 6.5、接种量1.5%、温度37℃,抑菌圈直径可达17.87 mm.进一步经硫酸铵沉淀粗提,对肠球菌素E3的部分性质进行研究,结果表明:肠球菌素E3具有很好的耐热性,超声波及紫外线短时处理对其稳定性没有影响,表面活性剂TritionX-114对其活性会有一定的抑制作用.%We studied a Enterococcus faecium BC-3, which is stored in the laboratory, can produced bacteriocins. Fermentation conditions were optimized as follows: fermentation time 20 h, pH6.5, inoculation 1.5%, temperature 37℃, inhibition zone diameter achieved 17.87 mm. Further, to extract E3 with ammonium sulfate, and studied some of its properties. The results showed that:enterococci E3 had good heat resistance, ultrasonic and short-term ultraviolet treatment had no effect on its stability , but a surfactant TritionX-114 had some inhibitory effect on its activity.
