地沟油检测指标研究进展

摘要

The waste oils being illegally used as cooking oil is one of the severest problem in food safety. In order to screen and apply different methods for waste oils identification ,common identification indexes of waste oils were classified and their connotations were interpreted. On this basis ,the stability of these identification indexes was appraised. At the same time,some strategies for dealing with the difficulty in identification of waste oils were provided. Moreover,new ideas to solve the problem of waste oils were discussed,from the identification indexes of waste oils point.%地沟油大量流向食用油市场是我国当前食品安全面临的严峻形势之一。为有效把握应用地沟油的各种检测方法，对地沟油常见检测指标进行分类，并诠释其内涵。在此基础之上，评价地沟油检测指标的稳定性，提出了若干应对地沟油难以检测问题的策略。还从地沟油检测指标的角度，探讨了解决地沟油问题的新思路。
