不同日龄樱桃谷鸭生长性能及肉品质测定

     

摘要

实验旨在研究不同日龄樱桃谷鸭的肉质变化规律,为确定合理的上市日龄提供科学依据.以樱桃谷鸭为实验材料,测定其28、38、42、45日龄的生长性能、常规肉品质以及肌肉营养物质含量.结果表明:28日龄肉鸭的活重、胸肌重、腿肌重、胸肌剪切力、腿肌剪切力等指标均显著低于其他3个日龄(P<0.05);而38、42与45日龄间的腿肌重、腿肌剪切力均未表现出显著差异(P>0.05);不同日龄胸肌、腿肌蛋白含量的变化趋势相同,都表现为先上升后下降;且4个不同日龄之间胸肌蛋白含量差异显著(P<0.05);只有38日龄的腿肌蛋白含量显著高于其他日龄(P<0.05);胸肌、腿肌脂肪含量在早期日龄中都具有较高水平,胸肌、腿肌脂肪含量在4个日龄中均有显著差异(P<0.05),且42日龄的胸肌、腿肌脂肪含量均显著低于其他日龄(P<0.05).综上,38日龄时樱桃谷鸭肌肉蛋白沉积含量达到最大化,到42日龄时肌肉的脂肪含量明显降低;结合养殖体重,38、42日龄均可作为上市的参考日龄,提前或延迟上市或多或少都会影响肌肉营养物质的沉积.%The aim was to clarify the changes pattern in meat quality of Cherry Valley Duck at different ages,which provides scientific basis for determining the reasonable slaughter age.In this research,Cherry Valley Duck was selected as experimental materials,growth performance,normal meat quality and nutrient content of muscle were determined at the age of 28,38,42 and 45 days.As a result,body weight,breast weight,leg weight and the sheering force of breast muscle and leg muscle was lowest at the age of 28 days;and no significant differences were observed in the weight and sheering force of leg muscle at the other 3 ages.Besides same trend of changes was found in the protein content of breast muscle and leg muscle at all ages,which were shown to rise first and then fall.The protein content of breast muscle differed had significant difference among four ages and it reached highest at the age of 38 days.We found same trend of changes in fat content,which fell early,however,fat content of leg muscle had significant difference at four ages and the fat content of breast muscle differed from each other at the age of 28,38 and 45 days.In conclude,the meat quality of Cherry Valley Duck achieved its highest at the age of 42 days and slaughtering earlier or later will affect the deposition of muscle nutrients.
