山西老陈醋总酯检测方法探析

             

摘要

山西老陈醋是中国著名食醋,也是地理标志性产品。在山西老陈醋各项指标检测分析的过程中,总酸、不挥发酸、还原糖、氨基酸态氮、无盐固形物等指标平行性良好,准确度佳,而总酯测定的平行性较差,准确度波动较大。对山西老陈醋国家标准中的总酯检测方法进行了初步探析,提出了目前总酯检测方法中存在的问题和改进思路。%Shanxi vinegar is the famous Chinese vinegar,as well as the geography trademark product. In the detection and analysis process of every index of Shanxi vinegar,the parallelity of the indexes such as the total acids,involatile acid,reducing sugar,amino acid nitrogen,salt-free solids is good, and their accuracy is better.While the parallelity of total ester detection is worse and its accuracy has bigger fluctuation.The detection methods for total ester in Shanxi mature vinegar national standard are analyzed.The existing problems and improvement ideas of total ester detection methods are proposed.
