超临界花椒提取物在麻辣鸭脖中的应用

The spicy duck neck originates from Changde of Dongting Lake in Qing Dynasty,spreads from Hu'nan to Sichuan and Hubei,and sweeps the country in recent years.The spicy duck neck has spicy and delicious taste,more chewing more pleasure,is a rare delicacy.The supercritical Chinese prickly ash extract in spicy duck neck is analyzed through the contrast test and sensory evaluation method in this experiment and it proves that Chinese prickly ash extract in spicy duck neck can improve hemp flavor and quality of duck neck and has super performance.%麻辣鸭脖最早起源流传于清朝洞庭湖区的常德，经湖南流传至四川和湖北，近年来风靡全国。其麻辣鲜香，劲爽十足，越啃越有味，是一道不可多得的美食。实验通过应用试验对比和感官品评的方法，对超临界花椒提取物在麻辣卤鸭脖中的应用进行了分析，证明了花椒提取物在麻辣鸭脖的卤制过程中对提升鸭脖麻味和品质的显著作用和超高的性价比。
