营养胡萝卜洋葱豆豉辣椒酱的制作工艺

             

摘要

Nutritious chili sauce with carrot, onion and fermented black bean is produced by taking carrot, onion, fermented black bean and dried peppers as the main raw materials.The orthogonal design is used to research the optimal making formula.The result shows that the optimal formula is carrot of 22%, onion of 22%, dried fermented black bean of 9%, dried peppers of 15%, refined rapeseed oil of 65%, salt of 0.6%, sugar of 0.3%, thick broad-bean sauce of 5%, chicken essence of 0.4%.The finished product is rich in ingredients,with red and brown color.It's a kind of chili sauce with higher nutritional value.%营养胡萝卜洋葱豆豉辣椒酱以胡萝卜、洋葱、豆豉、干辣椒为主要原料制作而成.通过正交试验确定其制作的最佳配方,即胡萝卜22%、洋葱22%、干豆豉9%、干辣椒15%、菜籽油65%、食盐0.6%、白糖0.3%、豆瓣酱5%、鸡精0.4%.此成品主料丰富,颜色红、褐相间,是一种营养价值较高的辣椒酱.
