高鲜型酵母抽提物的开发进展

             

摘要

近几年来,富含天然I+G的酵母抽提物产品以其独特的增鲜效果、良好的复合型口感,在国外已逐渐应用于调味料的生产中,是现代食品工业生产新型的健康增鲜原料.目前安琪酵母开发的高鲜型酵母抽提物系列产品,天然I+G含量可以达到20%左右.文章对高鲜型酵母抽提物产品的基本生产原理和工艺、产品指标、基本特性和应用前景等进行了初步的分析和研究.%In recent years,yeast extract products which are rich in natural I+G with unique umami increasing effect,compositive good taste,have been gradually used in the production of seasoning in foreign countries.It is a new type of healthy umami material for food industry.At present,the hi-fresh yeast extract products developed by Angel Yeast can reach 20% natural I+ G content approximately.Make a preliminary analysis and research on the basic principle and technology,product indexes,basic characteristics and application prospect of hi-fresh yeast extract products.
