黑种草籽乙醇提取物抗氧化性的研究

摘要

黑种草籽乙醇提取物能延缓油脂的自动氧化过程,且随浓度的升高,抗氧化作用增强.黑种草籽乙醇提取物、维生素C、黄酮均有清除羟基自由基的能力,黄酮的清除能力最好,维生素C的次之,黑种草籽乙醇提取物的也有一定的羟基自由基清除能力.现有的研究报道认为维生素C、黄酮类化合物都是优良的抗氧化剂,该文的实验结果是黑种草籽乙醇提取物也具有清除自由基的能力,有一定的抗氧化性.%The experiment results indicated that ethanol extracts from black seed could delay the automatic oxidation process, and the scavenging ability was increased with the increment of its concentration. Ethanol extracts from black seed, vitamin C, flavonoids can clear the hydroxyl free radical. The results suggested that the hydroxyl radical scavenging activity of flavonoids was the highest followed by vitamin C and ethanol extracts. It is known that both flavonoids and vitamin C are excellent antioxidant. The experimental results showed that ethanol extracts from black seed have the scavenging activity of hydroxyl radical.
