广西产鸭脚粟米营养成分的测定及分析

     

摘要

以市售鸭脚粟米为研究对象,采用国家标准方法对其营养成分进行测定及分析。结果表明,鸭脚粟米的水分、粗纤维、粗脂肪、蛋白质、淀粉、总糖、总黄酮、总皂甙、原花青素和维生素 E 的含量分别为12.0、2.45、1.30、7.67、61.2、0.73、0.41、0.18、0.0147、0.00246 g/(100 g)。铁、锌、锰、钾、硒五种矿物质元素的含量分别为3.05、2.50、7.64、240.4、0.00323 mg/100 g。研究结果显示,鸭脚粟米是一种营养元素均衡全面、价值较高的谷物,具有巨大的潜在应用价值。%The nutritional components in Eleusine coracana Gaertn were detected and analysed by national standard method. The results showed that the water content,fiber,lipid,protein,starch,total sugar,flavonoids,saponins,procyanidins,vita-min E in Eleusine coracana Gaertn were 12.0,2.45,1.30,7.67,61.2,0.73,0.41,0.18,0.014 7,0.002 46 g/100 g ,re-spectively.The contents of mineral elements of Fe,Zn,Mn,K and Se were 3.05,2.50,7.64,240.4,0.003 23 mg/100 g, respectively.The results of determination indicated that Eleusine coracana Gaertn was a kind of crop with rich and balanced nu-trition,and had a great potential application value.
