土壤中不同硒含量对大豆中主要组成成分的影响

             

摘要

以丰城市三个不同硒含量地区种植的大豆为研究对象,研究了土壤中不同硒含量对大豆中主要成分的影响.结果表明,随着硒含量的不同,C区(高硒区)大豆中蛋白质含量(35.08%)比A区(低硒区)出现显著性提高,而油脂的含量下降,由18.90%(A区)下降到16.52%(C区).硒含量的不同,对蛋白质的种类没有改变,但对大豆蛋白质分子量分布产生了影响.SDS-PAGE图谱表明,不会改变大豆蛋白质亚基组成,蛋白质谱带数量相同.当土壤中硒含量越高,大豆氨基酸组分中受到影响较大的是半胱氨酸(Cys)和蛋氨酸(Met),在低硒区(A区)和高硒区(C区)半胱氨酸(Cys)含量分别为2.58%和0.124%,蛋氨酸(Met)含量分别为3.02%和2.24%.随着硒含量的不同,对大豆油脂中各脂肪酸的含量在数量上有些变化,但都不存在显著性差异;总硬脂酸的含量会随着硒含量的增大而呈下降的趋势,总n-3多不饱和脂肪酸(Tn-3PUFA)的含量也会随着硒含量的增大而呈上升趋势.%The effects of different Se contents in three different soils on the nutrient contents of soybean grown in Fengcheng City were studied.The results showed that with different Se contents,the protein content ( 35.08%) in the soybean grown in the C region ( high Se region) was significantly higher than that in the soy?bean grown in the A region ( low Se region ) , but the crude oil content was lower, which decreased from 18.90%( in the A region) to 16.52%( in the C region);the type of protein did not change,but Se content had an impact on the distribution of molecular weight of soybean protein;different Se contents did not change the subunit composition of soybean protein,the SDS-PAGE spectra showed that protein the bands did not increase or decrease;however,the amino acid composition was affected to a certain degree,especially cysteine ( Cys) and methionine (Met) were affected significantly,the cysteine (Cys) content was 2.58%(in the A region) and 0.124%( in the C region) ,and the methionine ( Met) content was 3.02%( in the A region) and 2.24%( in the C region).With dfferent Se contents the content of fatty acid of soybean oil changed to a certain degree in the number,but there were no significant differences in the total;the stearic acid content increased with the de?crease of Se content,the total n-3 polyunsaturated fatty acid ( Tn?3PUFA) content increased with the increase of Se content.
