基于纽马克翻译理论的豫菜菜名英译分析:以阿五美食画册为例

摘要

豫菜“选料严谨、讲究制汤、五味调和、质味适中”。豫菜可以代表中华饮食文化起源和精髓。在中华人民共和国成立后，周恩来总理选豫菜为国宴用菜，这一习俗沿用至今，并且国宴的总厨也都来自河南。通过翻译豫菜文化资料，尤其是豫菜菜名，可以让外国人更加了解中华饮食的营养和中华文化的珍贵之处，因为豫菜文化体现在豫菜菜名以及其背景介绍中。
　　 本文根据纽马克的语义翻译和交际翻译理论，对阿五美食这一豫菜代表公司在伦敦奥运会的宣传资料加以研究，着重分析豫菜菜名翻译中的问题，即怎样让外国读者更好地理解豫菜菜名中所包含的中国饮食文化，并同时准确传达豫菜菜名含义。通过语义翻译和交际翻译的恰当应用，译者能够更好传达源语言的精髓，更好表达中文菜名的信息。应用语义翻译可以更好地保留原菜名中的文化内涵，从而宣传发扬中华烹饪文化，应用交际翻译能够更好地传达原文的信息，便于目标读者理解和接受，两种理论相结合的应用创造性地结合两种的优点。另外，为了保证译作的质量，译者一方面应该学习所以资料的背景知识，熟悉豫菜文化，也就是熟悉菜品的制作过程，特色的配料以及烹饪方式。另一方面，译者应该熟悉西方文化和生活习惯，以保证译文能够容易被目标读者接受。
