In this paper, we present a new approach to highlight correction of color images and discuss its application in bread industry. We demonstrate that reflected light from any point on a bread sample could be described as a linear combination of the object color and the highlight color. We propose that by projecting RGB color coordinates of any dielectric object such as bread, along its incident light source onto a perpendicular plane, one can estimate its underlying highlight corrected color image by associating the projected coordinates with incident light source specific HSV color coordinates. We compare and contrast image color analysis results of our bread recognition system with and without the highlight correction.
