GMP's- Good Manufacturing Practices have been established by the FDA to help the food/ingredient manufacturer produce an unadulterated product. For the sugar industry these products are granulated sugar, specialty sugars, and liquid sugars. All Food/ Ingredients must be produced using FDA GMP's. GMP's are a very broad topic, they include: (ⅰ) Hazard Analysis and Critical Control Points (HACCP) (ⅱ) Sanitation, (ⅲ) Personnel Practices (ⅳ) Plant and Grounds (ⅴ) Equipment (ⅵ) Process / Process Controls (ⅶ) Defect Action Levels (ⅷ) Consequences of Product Adulteration. This paper will cover GMP's as they relate to: (1) Documentation Requirements (2) Personnel Practices (3) Plant and Grounds (4) Equipment (5) Process / Process Controls (6) Defect Action Levels (7) Consequences of Product Adulteration (8) A brief discussion on Operational Risk Management for Food Security. The implementation of GMP's at Okeelanta has resulted in the successful production of Bottler's and Canner's Standard Sugar. Internal Monthly Random Audits and External Third Party Audits (AIB, ABC, Silliker, and ASI) are done to verify that the program is working.
