The differentiation of frozen-thawed from unfrozen fish (shotted halibut Eopsetta grigoriewi, Pacific saury Cololablis sair) and sheelfish (Kuruma prawn Penaeus japonicus, common squid Tordarodes pacificus, spear squid Loligo bleekri K.) was investigated using Torrymeter raading (TMR), K value (KV), and Hunter Color difference scale. The two fish showed the marked difference in TMR but not KV between the frozenthawed and unfrozen samples. No difference in TMR or KV was observed on the prawn and the two squids frozen-thawed and unfrozen. Rapid and heavy discoloration was observed on frozen-thawed kuruma prawn during iced storage. Frozen-thawed spear squid showed a characteristic color changes differentiable from unfrozen samples.
