The Effect of Deodorization on Volatile Compositions of Fucoidan Extracted from Brown Seaweed (Sargassum sp.)

Fucoidan is a biologically active polysaccharide that were made up of complex mixture of fucose, sulfate and uronic acid. This study was conducted to identify the volatile compositions of crude fucoidan and deodorized fucoidans extracted from brown seaweed Sargassum sp. (F_(sar)). The volatile compositions was also compared with a standard commercial fucoidan (F_(ysk)). Fucoidan was extracted from Sargassum sp. originated in coastal area of Indonesia, by using a low pH acid extraction method. Approximately 20 mL of 1% freshly extracted fucoidan was then subjected to deodorization process by using three different method i.e., by treating it with 10 g activated carbon (F_(ac)), 0.4 g ion exchange resin, Amberlite 67 (F_(resin)) and 2 mL of 1% calcium carbonate (F_(CaCO)3) and incubated for 12 hrs before further analysis. Forty-six volatile compounds were successfully identified in all of the five samples by using Headspace-Solid Phase Microextraction (HS-SPME) and analysed by using Gas Chromatography Mass Spectrometer (GCMS). In F_(sar), 72% of the total volatile constituents were identified as aromatic hydrocarbons, 23% hydrocarbons and 5% alcohols. In Fy_(ysk), all compounds detected are in group hydrocarbons. In F_(sar), all of the compounds identified were classified as odor active compounds which had a contribution to unpleasant odor in fucoidan. After deodorization, 72% of aromatic hydrocarbons detected in F_(sar) were reported to be absent in all deodorized fucoidans. Both F_(resin) and F_(CaCO)3 showed a reduction in peak area percentages of phenol, 2,4-bis (1,1-dimethylethyl)- from F_(sar) (1.30%) to 0.79 and 1.07% respectively. Meanwhile in F_(ac), no presence of phenol, 2,4-bis (1,1-dimethylethyl) was reported. These findings are essential to propel the advancement of research in deodorization technologies of marine products, especially fucoidans.
