IntroductionBecause of its physiological function of human body,importance of dietary fiber as the seventh nutrient is known since early 1970s.Many western developed countries have emphasized on studying the consumption of dietary fiber to human health and prevention of certain diseases.This is because high fat and starch diets have been identified as cause of many diseases,so-called "civilized sickness."Consuming dietary fiber has been proven to reduce some of diet related diseases.Along with a rapid economy development of China over the years,the people's standard of living rises ceaselessly,Chinese diets have also changed tremendously that many foods are contained too much fat and starch.
