A number of basic and epidemiological studies from Europe and the United States and other developed countries showed that regular consumption of whole grain foods could reduce the risk of cardiovascular disease,type Ⅱ diabetes and other nutritional and metabolic diseases.Therefore,in recent years,whole grain foods have been paid an increasing attention and the relative industry has been developed rapidly.Especially production and consumption of whole wheat food is in an increasing trend yearly.However,the lack of whole wheat flour identified markers has become important bottlenecks in the development of whole wheat food industry.Previous studies found that the alkylresorcinol (ARs) only exists in the outer layer bran of whole wheat with high content.
