The conviction that food plays a role in health and disease is hardly new. We encounter it in every culture and in mythologies across the globe. For millennia it was based on empirical observation and was often intertwined with religious belief. Inevitably, science stepped in and began investigating the relationship between food and health, eventually leading to the concept of nutrients. Modern nutritional studies are largely divided into two groups: those that focus on individual nutrients and thosethat investigate the effects of 'diets', i.e. eating patterns of specific populations and geographic regions.
