The phase behavior of a globular pea proteins – sodium alginate aqueous mixture at 20°C was investigated. Solvent conditions were pH 7.2 and 0.1M NaCl, and so as to induce a macroscopic segregative phase separation. Phase diagram of such a ternary system was built and showed a marked thermodynamic incompatibility. The boundary between cosoluble and immiscible domains was not well-resolved for such a complex mixture of proteins. With the aim to characterize the physicochemical properties of such a biopolymer blended system, the microstructure of several mixtures was elucidated with Confocal Laser Scanning Microscopy (CLSM) and image analysis was performed in order to correlate macroscopic and microscopic features.
