Carrageenan is a sulfated galactose polymer with an average molecular weight well above 100 kilodaltons (kDa). It is derived from several species of red seaweeds of the class Rhodophyceae. It has no nutritive value and is used in food preparation forits gelling, thickening and emulsifying properties. The three main copolymers in carrageenan are designated as iota (i), kappa (k) and lambda (A), depending on the number and location of the sulfate moieties on the hexose backbone. Processed Eucheuma seaweed is a semi-refined form of carrageenan and has been derived from either E. cottoniior E. spinosum.
