摘要

In the years since cereal chemistry laboratories were first established in Australia, the evolution of new technologies and the basic sciences underpinning the evaluation and enhancement of cereal quality has been spectacular. It would have been difficult to envision even the concept of functional genomics thirty years ago, let alone its potential in cereal quality improvement programs. These scientific advances, together with technologies that are currently emerging, fundamentally change the way weundertake the evaluation of cereal quality, both in a theoretical and a practical sense.
