-The American elderberry possessed three main cyanidin based anthocyanins: cyanidin-3-O-coumaroyl-sambubioside-5-glucoside, cyanidin-3-O-sambubioside- 5-glucoside, and cyanidin-3-O-sophoroside. -The relative composition, or contribution of each individual anthocyanin to the total individual anthocyanin content were extremely similar, especially between Adams II and Wyldewood. Bob Gordon also had a similar relative composition, except the cyanidin-3-Osophoroside content was almost two-fold higher than the other two genotypes. -Individual anthocyanins displayed dierent stabilities between genotypes and stability of anthocyanins in elderberry juice was poor during frozen storage, especially after 6 and 9 months.
