Mycotoxins are toxic substances produced by fungi. Ochratoxin A is a mycotoxin found in a number of foodstuffs and can be produced in cereals under adverse storage conditions. The overall objective of this project was the protection of consumer healthby describing measures for decreasing the amount of ochratoxin A in cereals that are produced in Europe. The project included the whole food chain from primary production to the final processed product. The objectives and expected achievements were divided into four different tasks.
