Several stresses are encountered by brewing yeast during fermentation including nutrient limitation, the transition from aerobic to anaerobic conditions and exposure to cold shock. In haploid yeast strains all of these stresses result in the down-regulation of CWP1 and CWP2 that encode cell wall mannoproteins although their functionality has not been established. The TIR and DAN genes that encode putative cell wall mannoproteins are specifically upregulated in response to exposure to cold shock and anaerobiosis respectively. These mannoprotein-encoding gene families have been detected in ale and lager production strains using PCR. The impact of their differential expression on brewing yeast cell wall composition and functionality during fermentation is considered.
