Food safety is today a major concern for consumers, for food producers, but also for legislative authorities. The European Community policy concerning mycotoxins in foodstuffs and beer in particularly will be explained. The latest developments on the fates of ochratoxin A and Fusarium mycotoxins in the barley malt beer chain will be reviewed. Advancements for measuring their concentrations in beer by HPLC or mass spectrometry, for detecting their presence by PCR and for determining their toxicities with cell culture systems will be presented. Other contaminants such as biogenic amines, acrylamide, monochloropropanediol and pesticides will also be addressed.
