Free and glycosidically bound volatile compounds in orange juice were investigated. Glycosides in pulp were isolated by using Amberlite XAD-2 column adsorption and methanol elution. The bound volatile compounds were released by almond βglucosidase. SPME and solvent extraction were used to extract the free and released bound volatiles. Both free and released bound volatile compounds were then determined by GC-MS. The results indicate that SPME is more suitable for the extraction of free volatiles, while solvent extraction could be more effective for the extraction of released bound volatiles. A total of 31 free volatile compounds were identified by the method of SPME, and eleven bound volatiles were extracted by solvents. Only ethyl 3hydroxyhexanoate and cis-carveol were found both in free and bound forms, while 11 bound volatiles were not present in the free form.
