Pectin is an intercellular filler in fruits, vegetables, tubers, etc and supports the plant tissue by bonding cells to each other. It occurs in the plant as a form of water-insoluble protopectin bound to cellulose, hemicellulose, lignin, etc. With maturation of the plant tissue protopectin is transformed to soluble pectin by pectinase and hence becomes extractable from the tissue.
