Scope and Method of Study. The aim of the study was to develop a screening procedure to extract valuable components from fruit and vegetable processing wastes which can be easily replicated on a large scale. Variety of extraction conditions such as solvent utilization, ratio of solvent: waste and interaction time were tested for their effect on the extraction procedure. The activity of the extracts was tested based on antimicrobial activity against common food pathogens: Escherichia coli0157:H7 and Staphylococcus aureus.;Findings and Conclusions. The results from the study concluded that the extracts contain bioactive components in sufficient quantities to inhibit the pathogens. Thus, value can be extracted in the form of bioactive antimicrobial compounds from grape waste. The most effective solvent was 50% acetone, which implies that this extract contains bioactive components in higher amounts than the other solvents to inhibit the pathogens. The experiment was conducted on a lab scale and further research needs to be conducted to scale up the process. Further research also needs to be conducted to identify and characterize the compounds.
