The pure theoretic-mathematical method, orthogonal design was applied to the conditions optimization of polyphenols extracting from apple residue in this paper. Two orthogonal experiments were designed according to the theory and carried out to optimize the extracting conditions of polyphenols. The variance analysis and F test were also conducted and the optimum extraction parameters for polyphenols were got and proved. The results show that this method, which had been invented to dissolve multi-factorcontrolling problems, is simple, rapid and efficient to get the optimal conditions of polyphenols extracting.This gives us a promising thought about the conditions optimization of polyphenols extracting.
