Volume fraction determination of oil-in-water-emulsions by dielectric spectroscopy using principal component analysis

The oil volume fraction contol is a very important step in the continuous production of emulsions in order to ensure a constant product quality. Many different product characteristics are influenced by the oil volume fraction, e.g. the rheological and sensorical properties. In industrial production as well as in research of emulsions a fast and exact fraction determination is desirable. In this contribution we present a method using dielectric spectroscopy and principal component analysis, specifying the dispersed phase fraction.
